Blue Corn Pancake Mix
Recreate our sweet & sassy griddlecakes in your kitchen or on your next camping trip! Blue cornmeal gives this breakfast favorite a satisfying chew and unique sweetness. Just add your own organic milk, eggs, oil, and vanilla. Comes in a 1 pound bag containing mix and instructions (also included below).
Instructions: It is very important that this bag of dry ingredients be well-mixed before any cooking or planning begins. Stir, stir, stir! Using the entire bag of mix creates a giant batch of cakes, but the recipe is easily halved if you just want a snack!

...Makes 18 pancakes (4 oz. scoop)
Whisk together in a small bowl:
3 cups of milk
4 eggs
1 teaspoon of vanilla
1/2 cup of oil
Make a well in the center of the dry ingredients and pour the whisked wet into the well. Stir gently but thoroughly. You may need more milk to make it thick yet pourable (similar to the consistency of cake batter).
Ladle onto hot greased griddle, flipping when sides firm and small bubbles start to pop on surface of cakes. The batter will keep, covered, several days in the fridge. Add liquid to get mix to the proper consistency.
